Skills on CV Breakdown?

So boys, I was wondering how you break down your skill set on your CV in order to diversify the range of skills you have and quantify them properly? How much should I pick apart my skills and how niche should I go to show depth? 

To exemplify, should I list off my specialisation with ILS' or breakdown ILS into separate skills within it such as CAT Bonds?

Thanks all, just thinking in terms of setting up a new resume as haven't written one since I graduated.
